To make Ramsay’s Scrambled Eggs and Smoked Salmon, you’ll need the following:

  • 4 large daily croissants with butter
  • 12 large eggs
  • 3.5 ounces (7 tablespoons) cold unsalted butter, diced
  • 1/4 cup heavy cream
  • 1-2 tbsp. chopped onions
  • 10.5 oz smoked salmon slices
  • Sea salt and freshly ground black pepper to taste

Ramsay suggests starting by trimming the ends of the croissants and cutting each into four to six circles. Season the slices lightly with salt and pepper to taste.

For the scrambled eggs, Ramsay recommends cracking the eggs directly into a cold, heavy-bottomed saucepan and placing it over low heat. Add a small amount of butter and gently mix the eggs with a wooden spoon, making sure that the yolks and whites are completely mixed.

Once the eggs begin to scramble, remove the pan from the heat and use a spatula to scrape the mixture from the sides and bottom of the pan. Return the pan to the heat and repeat the process, stirring and scraping, until the eggs form soft, creamy curds. This process should take about five to six minutes, and Ramsay emphasizes not to overcook the eggs, as they need to remain moist and soft. Once done, remove from heat, add a knob of butter and chopped green onion and season to taste.

For the croissants, heat a pan over medium heat and gently toast the slices on both sides for a minute or two until golden. To serve, arrange toasted croissant slices on a plate, top with soft-boiled eggs, and finish with slices of smoked salmon, covering the eggs, for a luxurious holiday breakfast.

Gordon’s top tip for Christmas

Ramsay offered his “top tips for a successful Christmas” in a TikTok clip shared by The Jonathan Ross Show.

“Stop worrying about making lunch too early. Move it out by 3 or 4 hours. That way you won’t stress and you’ll enjoy it,” Ramsay advised. Following this practical advice can help ensure a calmer Christmas with plenty of time for other holiday traditions.

Ramsay also stressed the importance of making the cooking process a family affair. “On Christmas Eve, gather the whole family, uncles, aunts and grandmothers, to help clean the vegetables. Prepare the vegetables,” he suggested.

When it comes to the main course, Ramsay assured viewers not to stress about the turkey. “Everybody is worried about this turkey. Honestly, first thing, around 5:30 or 6 in the morning, put the turkey in the oven on low and then go back to sleep for a few hours,” he explained.

To stay organized, Ramsay recommended making a detailed plan for the important day. “Make yourself an A, B, C, D plan that tells you what to do every hour of the day until lunch,” he said.
